Food for the Road

One lesson we  learned the hard way is the importance of traveling with healthy food.  When traveling by car we carry an ice chest with food for meals for the trip as well as snacks.

We take salad on road trips to help keep us eating healthy.  Sometimes I take the ingredients and mixed them up when we stop to eat, but I also like to use “salad shakers.”   An individual portion of salad goes in the clear plastic cup. The dressing is put in the lid and the cap snapped in place. When you are ready to eat simply press down on the button on the top of the lid which forces the cap off the dressing reservoir allowing the dressing to run down over the salad. Then you shake the dickens out of the container which distributes the dressing over the salad. Be sure the lid is on tight before shaking if you don’t want salad flying everywhere.

Next time you travel by car be sure your travel food is healthy.   Include things like fresh fruit and vegetables and try a salad.

Celebrating the Small Things: Spring Flowers, Finally!

We finally have flowers on our patio.  I decided we just wouldn’t have flowers this year because extremely strange weather conditions made the availability of annuals late.

There have been other years I have decided not plant flowers, like the years when residents above us kept dropping cigarette butts and sometimes lit cigarettes on our patio.  There was also the occasional beerfall from heaven.

However, every year Bob convinces me not to give in to circumstances and I plant the flowers.  They serve as a reminder of how easily a few flowers can transform a broken slab of concrete into a garden and a positive thought can transform a world of negativity.

My last semester of college I found myself in a different religion class than I had enrolled in. The instructor had left over the summer. So I thought I had enrolled in a class on the Old Testament Prophets finding myself in something called The God Man Christian Experience. I was a scientific minded Baptist headed for graduate school to study physiological psychology. My path was set. My faith was set.

But the Universe had a different idea. Bob Imperato was brought into my life to introduce me to Christian mysticism and things have never been the same. I spent hours in Mr. Imperato’s office ranting, but could not refute what I was learning. I knew within my spirit it was true. The wise teacher leaned back in his chair smiling and let me rant. He knew he was witnessing the awakening of truth that had been half asleep inside me waiting for the right time for the teacher to appear.
