May is National Salad Month

I love  salad!  So when I learned May is National Salad Month I was ready to celebrate. If you are having trouble meeting the new My Plate nutrition guidelines of one half of your plate being fresh fruits and veggies salad is one way to accomplish this.

Try a variety of greens including spinach, arugula, watercress, radicchio and others. If you have trouble finding variety look for Spring Mix.

Add extra veggies or fresh fruit like oranges or strawberries to your salad for an added nutritional boost.  You want lots of color.

Don’t drown your salad in a fat laden dressing. Try a nice vinaigrette for a healthier dressing. Remember a serving of salad dressing is only one Tablespoon.

Please join me in celebrating National Salad Month by making a conscious effort to work more salads into meals.

Celebrating Small Things: The “Family Tree”

Since today is Arbor Day and we live in Nebraska where Arbor Day began, it seems appropriate to express appreciation for our tree.  We have a tree outside our patio door, a rare luxury in an apartment.

I call it the “family tree” since it seems to attract more than a few Robins.  In case you don’t know we are Robbins.

This tree and the bird feeders on our patio bring much enjoyment to us.  The tree acts as the “waiting room” for the feeders.  Bob recently commented that the money spent on birdseed is a small price to pay for the hours of entertainment we enjoy watching the birds.

In celebration of Arbor Day, I invite you to think about a special tree in your life.

Love Your Mother Earth

Today is Earth Day.  As a person of faith I believe God is our Father, but the Earth is our Mother.  Scripture tells us we were formed from her and we return to her when we die.  We were not given the earth to plunder and destroy but to care for and nurture.

This Earth Day think about how much of the earth’s precious resources you use.   Think of ways you can reduce your consumption of water, electricity, gasoline and land.
