Ever tried a “pepperwich?” Many people are familiar with baked stuffed peppers covered with tomato sauce, but you can also stuff you favorite sandwich filling into a raw pepper shell.
Cut a large green bell pepper in half lengthwise. Remove seeds and as much white pith as you can. I also cut out the stem. Fill up your pepper shells with your favorite filling. I like an eggless egg salad made with chickpeas, but tuna salad is also nice as are sliced sandwich meats, cheese and your favorite condiments. One green pepper makes two servings.

I laugh a lot. Not just a little giggle. No, I laugh right out loud and don’t care who hears it.
A boss used to tease me about my laugh. After I left for another job she called, telling jokes until I finally laughed. On the other end of the line I heard, “It’s about time! I miss that cackle of yours. No one laughs around here anymore.” She didn’t know she could reintroduce laughter by laughing herself.
There are actual studies showing laughter may indeed be the best medicine. So go ahead and laugh. If anyone says anything tell them it’s for your health.
One of the things I love about the internet is the opportunity to visit places I many never actually go in real life. A favorite way for me to spend time is to visit some of the world’s great art galleries online. One of my favorites is the Louvre. Yes, you read that right the Louvre — the famous one in France. Didn’t know they had a website? Go check it out.

Go Fishin’! Fishing really isn’t about fish. For many people fishing is about getting away from it all.
Easier before cell phones, but still possible. Find a quiet place and leave the phone at home. Don’t buy expensive gear, just gather up basic equipment and go.
Fishing is a good spiritual exercise. It teaches us to wait, something most of us don’t do very well. So take a little time and just go fishin’!
