My 10 Favorite Gluten Free Foods

1.  Strawberries — what else is there to say?  They are candy.

2.  Spaghetti Squash with homemade sauce.

3.  Homemade soup –any kind, but I love chili (meat or veggie).

4.  Anything stir fried — (well maybe not anything, but you get the idea) served over brown rice, quinoa amaranth or millet.

5.  Gluten Free Brownies —  I have my own recipe, but Bob’s Red Mill mix is wonderful.

6.  Quinoa salad — If you haven’t tried quinoa yet, you don’t know what you are missing.

7.  Steak  — Okay, so I’m a carnivore.

8.  Broccoli — lightly steamed.

9.  Sweet potatoes baked whole, cut into wedges as oven fries, mashed or even made into soup.

10.  Lasagne made with DeBoles gluten free lasagna noodles, or skip the noodles and use  zucchini.

As I get older I find myself more and more in tune with the changing seasons.  Perhaps when I was younger I thought I was too busy to listen to messages from our mother the earth, or maybe I thought doing so would make me seem weird.  As you get older, being weird doesn’t matter as much.

Listen to the wisdom of the changing seasons.  This is mother earth’s way of preparing us for what lies ahead.

We already know what we need to weather seasonal changes.  We just have to listen.

Rising to the Call, Driving and Emily Dickinson

Emily Dickinson is one of my favorite poets. There are more modern ways the sentiment of todays quote has been expressed, but I love language and older ways of putting words together.

We really don’t know how much we can do until the situation calls for it. I have learned this lesson repeatedly during the past year as Bob’s eye problems have required me to take over responsibilities I was sure I could not manage, but so far everyone has survived.  We still have a way to go but I am rising to the call.
